I LOVE crunchy food. I love fried chicken, croutons, and Ritz crackers crumbled over fresh strawberries with sugar!
However, none of these things are "legal" in terms of the Sugar Busters diet. As I've thought about these foods, I've discovered that it's the texture that I miss. That fried, crunchy texture that makes these dishes so good.
Much like flavor substitutions, I've learned a lot of options to create similar textures as these above. A lot of them are soy derivatives and I buy them from our local health food store. Here are a few of my favorites:
1. Use soy flour to make a great fried chicken.
2. Put soy nuts on your salads for a little crunch.
3. Use dried TVP (texturized vegetable protein) on top of ice cream or berries.
So, as you try to find "legal" foods to subsitute for your favorites, remember: Texture matters.
